New fast casual restaurant opens in Bearden

Simple and fresh, that's the mission of a new restaurant in Knoxville.

Zoe's Kitchen opened Thursday in Bearden Hill.

The Alabama-based chain caters to people on-the-go and to families. The concept started in 1995 with the aim of offering fresh, fast casual food.

Zoe's Kitchen says it has an array of options.

"Salads, wraps, pitas, we have a phenomenal dinner menu with steak kabobs, salmon kabobs, chicken kabobs. We make our own hummus as an appetizer with free-squeezed lemon juice," said Tyre Stuckey.

Woman fired by UT gets to pursue Sabbath complaint

KNOXVILLE, Tenn. (AP) -- A federal appeals court has revived a lawsuit by a Seventh Day Adventist who claims she was unfairly fired by the University of Tennessee at Knoxville because she refused to work on her Sabbath.

The ruling from a panel of judges for the 6th U.S. Circuit Court of Appeals was issued Tuesday in Cincinnati in favor of Kimberly Crider. The opinion says a lower court incorrectly dismissed the case when it should have explored whether UT could have accommodated Crider's religious beliefs without undue hardship for the university.

Northshore Target opening this week

Crews have been working for months, and finally, Northshore's newest retail store is almost ready to open.

Hundreds of Target team members have been putting the finishing touches on the new store at Northshore Town Center.

A ribbon cutting ceremony is set for Tuesday.  The store will open to the general public on Wednesday. The official grand opening celebration is this Sunday.

Those with Target say they're excited to get the store open, and thrilled for the future of the Town Center.
